French Onion Soup is one of my favourite soups ever – it’s just SO delicious and flavourful and then there’s all that delicious bread and melted cheese on top. I mean, who could resist?? I’ve made real, traditional French Onion Soup several times at home with amazing results using this recipe for Anthony Bourdain’s Les Halles French Onion Soup. It’s seriously to die for, but it’s terribly time consuming – not something I can wrap my head around in the stage of life I’m currently in.

Crock Pot French Onion Soup With White Beans (3) I will make the time to try Anthony Bourdain’s recipe again soon, but until then I’ll be making this Crock Pot French Onion Soup with White Beans instead. It’s an absolutely delicious version of French Onion Soup because you can actually caramelize the onions in your slow cooker (what?? I know!). And the addition of white beans and oregano adds a very subtle Italian twist – it’s kind of a mash-up between Italian White Bean Soup and French Onion Soup and the results are simply heavenly.

FAQs

Do you need to soak beans before a slow cooker? ›

I freeze them in two-cup portions, which makes it easy to pull out just what I need for a recipe. With beans made in the slow cooker, pre-soaking them is far less important than with other cooking methods. The long cooking time means that those beans will definitely soften!

Can I use white beans to thicken soup? ›

You can also thicken soup by puréeing it with cooked beans or lentils. White beans like cannellini beans or navy beans are especially good for puréeing. This recipe for Creamy Italian White Bean Soup is a great place to start. Puréeing hearty winter vegetables like butternut and kabocha squash will also do the trick.

How do you deepen the flavor of French onion soup? ›

A few sprigs of thyme and a bay leaf elevate the soup even more, but I take it a step further, adding a splash of fish sauce for complexity and depth—don't worry, it won't taste fishy—and a hit of cider vinegar to balance some of that oniony sweetness.

Is it safe to cook beans in a slow cooker? ›

But research now suggests that one tough ingredient shouldn't be cooked in the slow cooker at all — beans. All beans contain a compound called “phytohaemagglutinin,” also called PHA, or kidney bean lectin. Lectin is a type of protein that performs many functions in both plants and animals.

What happens if you don't soak beans first? ›

If you don't have time to presoak, don't sweat it– your beans will still be tender and delicious. However, there is one exception: if you're starting with old beans that have suffered moisture loss (Primary Beans defines as beans older than 2 years from harvest), a presoak may help you achieve evenly cooked beans.

What happens if beans are not soaked? ›

Modern cooking websites often say it doesn't matter. In a way, they're both right. Soaking beans can help improve the texture of the final product once the beans are cooked and reduce the gas produced when the food is being digested. But it isn't necessary to soak them.

Do I drain white beans for soup? ›

Unless the recipe tells you to keep the canned beans in their liquid, you should drain your can and give the beans a good rinse before using. This will improve the flavor and texture of your finished dish. Open your cans of beans using a can opener. There may be sharp edges from opening the can.

What is the secret ingredient to thicken soup? ›

Add Flour Or Cornstarch

Instead, ladle a small amount of broth into a separate bowl and let it cool. Add a few tablespoons of flour or cornstarch to the bowl and whisk until it's blended smooth. Next, bring the soup to a simmer and add the mixture back to the pot. Pro tip: Don't dump in the entire mixture at once.

Should bean soup be thick or thin? ›

The best bean soups have a thick, stew-like consistency.

Why do you put baking soda in French onion soup? ›

The caramelized onions for this soup cook more quickly due to a pinch of baking soda but still have that deep, slow-cooked flavor. Topping the soup with hot, cheesy toasts prepared while the soup simmers, eliminates the need to bake the soup in specialty French onion soup bowls.

How to doctor up canned French onion soup? ›

Some fresh rosemary or thyme brings a woody, peppery taste to the soup, complementing the umami flavor of the beef stock. With a splash of balsamic vinegar and green onions or fresh basil as a garnish, the canned soup is transformed from a grocery store original into a gourmet dish.

What spices add depth to soup? ›

"Ground paprika, turmeric, nutmeg, ground ginger, and other powdered spices add a touch of color and spiciness to broths," she says. As a general rule, use fresh herbs at or near the end of cooking and dried herbs and spices early on. This helps you get the flavors you're looking for in the right balance.

Can I leave beans in the crockpot overnight? ›

Start the pinto beans in the morning, and they'll be ready by dinner. If you are comfortable leaving your slow cooker plugged in, you can even cook them overnight.

Why are my beans still hard after slow cooking? ›

Dried beans typically have a moisture content of around 16%. However, as they age, moisture evaporates, giving pectin time to age and harden the skin. These beans can often take much longer to soften while soaking and cooking, up to twice the time!

Can you put unsoaked beans in slow cooker? ›

Do You Have to Soak Pinto Beans Before Cooking in the Crock Pot? No you do not! It was important to me that this recipe be as convenient as possible (we are already receiving mega kitchen points for cooking our own beans from dry, so why complicate our lives further?).

What is the minimum time to soak beans before cooking? ›

To soak beans the traditional way, cover them with water by 2 inches, add 2 tablespoons coarse kosher salt (or 1 tablespoon fine salt) per pound of beans, and let them soak for at least 4 hours or up to 12 hours. Drain them and rinse before using.
